Once you get your hands on some produce this season, it would just be silly to let all the nutrients slip away. Our nutrition expert Margaret Moses MBA, RD, LDN shares some tips with you on how to get the most from your healthy stuff.
As spring is upon us, take advantage of the variety of fresh vegetables and fruits becoming more available. Once you get them, here are a few tips to retain the wonderful nutrients…
- Consume the vegetables and fruits as soon as possible, (cut them up after you unload the groceries to promote healthy grab and go snacks).
-Clean thick-skinned vegetables and fruit well with a soft brush and water. Avoid soaking as some of the vitamins dissolve in water.
-Leave edible skins on vegetables and fruits, and trim away as little as possible. Most vitamins and minerals are found in the outer leaves,skin and the area just below the skin.
-Cook vegetables or fruits in a very small amount of water, better yet steam them. Nutrients are retained since the vegetable does not come in contact with cooking liquid.
-Save any liquid from the vegetables that are boiled and use it for broths or soup base.
